Italian Meatballs

  • 3/4 lb. ground beef
  • 3/4 lb. ground pork
  • 1/2 cup mozzarella cheese shredded
  • 1/4 cup Parmesan cheese grated
  • 2 Tbsp. heavy cream 30% m.f.
  • 2 large eggs
  • 2 Tbsp. tomato paste
  • 2 clove garlic minced
  • 1 Tbsp. onion finely chopped
  • 2 tsp. parsley
  • 2 tsp. basil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 large (gallon) freezer bag or reusable silicone bag


Assembly instructions:

  • Place the raw meats and other ingredients in a mixing bowl.
  • Mix with your hands. Wear gloves if desired.
  • Form into meatballs.
  • Lay out on a cookie sheet.
  • Freeze (raw).
  • Once frozen, transfer to a large freezer bag.
  • Remove excess air, seal, and freeze.

Cooking instructions:

  • Take out as many meatballs as you need.
  • Meatballs can be baked and/or fried from frozen. Ensure an internal cooking temperature of 160° F is reached.
  • Serve.


Pro Tip: Use an ice cream scoop or cookie scoop to help shape the meatballs so they are all similar in size.
