  • 4-6 chicken breasts boneless, skinless , cubed*
  • 1 cup onion diced
  • 28 oz. diced tomatoes canned
  • 1 bay leaf
  • 5 1/2 oz. tomato paste
  • 10 oz. mushrooms pieces, canned or fresh
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 3 cloves garlic minced
  • 2 tsp. Italian seasoning
  • 1/4 cup white wine or substitute non-alcoholic wine
  • 1 large (gallon) freezer bag or reusable silicone bag


Assembly Instructions:

  • Place the chicken in a large resealable freezer bag. Add the other ingredients. Remove the excess air and seal. Freeze.

Oven Cooking Instructions:

  • Thaw. Bake in a 350° oven for 1 hour.

Slow Cooker Cooking Instructions:

  • Cook in the slow cooker on low for 4-6 hours.


*You can use boneless, skinless chicken thighs without cubing if you prefer.
If you want this meal to be gluten-free, serve it with rice or on gluten-free pasta.
