Breakfast Sandwiches

  • 12 English muffins
  • 12 sausage patties
  • 12 eggs
  • 2 Tbsp. milk or heavy cream
  • 12 cheese slices
  • salt and pepper to taste
  • plastic wrap
  • 2 large (gallon) freezer bag or reusable silicone bag


Assembly instructions:

  • Fry the breakfast sausage patties in a skillet until cooked through. Set aside.
  • Preheat the oven to 325° and grease a 9x13 baking dish with nonstick cooking spray.
  • Whisk together the eggs, milk, salt, and pepper until well combined. Pour the mixture into the baking dish and bake for 24 minutes or until set.
  • Cut the eggs into 12 squares.
  • Layer a sausage patty, egg square, and one slice of cheese between two English muffin slices. Wrap each sandwich in plastic wrap and place them in a resealable freezer bag.
  • Store the sandwiches in the freezer.

Serving instructions:

  • When ready to serve, remove the sandwich from the plastic wrap and place it on a paper towel. Heat in the microwave until warmed through.
