Ingredients

  • 4 cups sugar
  • 4 eggs
  • 2 1/2 cups vegetable oil
  • 28 oz. pumpkin canned
  • 6 cups flour all-purpose
  • 2 tsp. baking soda
  • dash salt
  • 4 tsp. baking powder
  • 4-5 tsp. pumpkin pie spice or cinnamon
  • 10.5 oz. butterscotch chips
  • 2-3 large (gallon) freezer bag or reusable silicone bag

Instructions

Assembly Instructions:

  • Cream together sugar and eggs.
  • Add vegetable oil and pumpkin. Mix well.
  • In a large bowl combine dry ingredient. Sift well.
  • Add dry ingredients to wet ingredients and mix.
  • Stir in butterscotch chips.

Cooking Instructions:

  • Preheat oven to 350°. Fill muffin tins 3/4 full. Bake for 20-22 minutes.
  • Remove from muffin tins and let cool.
  • Once cooled, place in freezer bags, remove excess air, and freeze.
